Avocado-Honey Summer Fruit Salad
Avocado Honey Dressing
1 avocado, peeled & seeded
1/4-1/2 c. sour cream
1/4-1/2 c. mayonnaise
1-2 tbsps. honey
salt to taste
1/2 tsp. finely chopped crystallized ginger, optional

Combine all ingredients in a blender. Refrigerate until serving. Pour dressing over fruit salad when ready to serve.
Makes 2 cups or enough for 4-6 fruit servings.
 
Fruit Suggestions:
cantaloupe, cubed or balls
grapes, seedless red and/or green
honeydew melon, cubed or balls
peaches, sliced
pineapple, diced
strawberries
watermelon, cubed or balls
 
Additional options:
Toasted coconut flakes, raisins, chopped nuts (pecans, walnuts, pine nuts, pistachios), white rum, crème de cacao, or your favorite liqueur
 
Additional Serving Ideas:
Spoon dressing into avocado halves for a light dessert. Add whipped cream or Cool Whip for a light dessert and spoon into dessert dishes or stemmed glasses. Garnish with whipped cream spiral and mint. Serve with quick bread, crepes, fried tortilla shells, etc.
