Sushi Rice: Use short grain rice and follow directions on package or use a rice cooker. To 3 cups cooked rice: 5 tbsps. rice wine vinegar*, 1-1/2 to 2 tbsps. sugar, 1-2 tsps. salt. Combine vinegar, sugar and salt in saucepan and heat until sugar is dissolved. Can add to hot rice without heating mixture. Toss. Using a fan to puff the extra liquid away will make the rice shiny. (In a rice cooker, there's usually no extra liquid. Just add mixture.)

*A little sake or dry sherry can be substituted for a little vinegar.
In a hollow ring**, thin layer of rice, crab meat or crab salad, and diced or mashed avocado with lime juice, press lightly. Gently remove ring. Garnish with green onion, fried wonton skin strips, and serve with pickled ginger, wasabi, and/or a spicy soy sauce.


Spicy Soy Sauce: Combine 1/4 c. water, 3 tbsps. soy sauce, 3 tbsps. minced green onion, 1-1/2 tbsps. rice vinegar, 1-1/2 tbsps. sesame oil, 1 tsp. sugar, and, (optional, 1/2-3/4 tsps. Tabasco sauce)

**Ring: Can be pvc pipe, mousse ring(s), cookie cutters, tin can with both ends removed. Rings can be for individual servings or for several guests, using larger rings. Large rings: Use large cookie cutters, cheesecake ring, or large mousse ring.

6. New York: Sliced Apple, Sliced Avocado and Smoked Salmon
7. Pesto: Pesto, Turkey (Smoked or not) or Chicken Strips and Cream Cheese Strips
8. Philadelphia: Smoked Salmon (thinly sliced), Cucumber Strips, and Cream Cheese Strips
9. Shrimp: Diced or Whole cooked Shrimp and Cream Cheese Strips
10. Summer Melon: Prosciutto (diced) and Melon Strips
11. Texas: Sliced Cooked Beef, Cucumber Strips, and Spinach Leaves
12. Tuna, Chicken or Any Seafood Salad: Salad, Sliced Avocado and Lettuce Leaves
13. Vegetable: Pesto, Cucumber Strips, Tomato Strips and Mushroom Strips
 
Philly: Rice, Wasabi, Sesame Seeds, Cucumber, Avocado, Green Onions, Cream Cheese and Smoked Salmon

Manhattan: Rice, Wasabi, Sesame Seeds, Crab, Cucumber and Avocado

Shrimp: Rice, Wasabi, Sesame Seeds, Diced, cooked Shrimp, Shredded Carrot and Avocado

Ham and Greens: Rice, Wasabi, Sesame Seeds, Asparagus Spears, Thinly sliced Ham, and Shredded Carrots

NOTE: These are just suggestions. Of course, avocado can be added to any stack, or to any sushi roll.
